Escalivada (grilled vegetables)

Today I'm going to present you a really easy recipe than you can use as a side of your main meal, or as a main meal itself (ideal for picnic or light dinner).

It's a typical Catalan recipe, and it's called Escalivada, than literally means roasted or grilled vegetables.

DIFFICULTY: Easy

CALORIES: Around 200 -300 Cal.

INGREDIENTS: (for 2-4 persons, depeding if used as main meal or side)

- 3 red peppers (or 2 red and 1 green)
- 2 aubergines
- 2 onions
- 1 jar of anchovies or 1 big can of tuna
- olives (optional)
- olive oil
- salt and pepper
- rustic bread (*This would be the typical Catalan rustic bread, but in Ireland I use instead the Polish bread that is really similar)

PREPARATION: (1 h Cooking, 30 min preparation)

Wash the vegetables (peppers, aubergines and onions) and put them on a baking tray covered on the base with foil paper.
Preheat the oven to the max (180-200ยบ), and then add the vegetables.
Leave then to grill during 45 min -1 hour aprox. You can turn them around if you think they are toasting too much. When the ingredients are soft and toasted on the outside, take them out.
Let them cool for 15-20 min and then peel them (you will realise than it's really easy to peel them when are warm). Be sure to remove the seeds from the peppers and aubergines. Finally slice them length ways.

The escalivada is ready now, but first we'll have to serve it properly.

In this photo I just grilled onions and 3 different kind of peppers, but it's lovely with aubergine too

One of my favorite way to eat the escalivada is on the top of a toasted loaf of rustic bread, but you also can use the grilled vegetables as a side for a main dish, or as a complement in pizzas or cocas (like Catalan pizza).

To serve with bread:

- Toast the bread in the oven or the toaster.
- Place a couple of slices of each vegetable on the toast.
- Add the anxovies or the tuna (personally I prefer tuna or nothing).
- Add the olives (optional).
- Drizzle some olive oil on top and sprinkle with salt and pepper.
